If I could only recommend one recipe to someone just starting their plant-based journey, it might be this chickpea curry. It's the definition of simple ingredients, big flavor — two cans of chickpeas, a smooth blended tomato base, and warm spices that make the whole house smell amazing.

Here's my little secret with this one: I blend the diced tomatoes before they go into the pot. That one small step gives you a silky, restaurant-style sauce that clings to every chickpea — no chunks, no fuss. Finished with fresh cilantro and a squeeze of lime, this is comfort food that just happens to be completely plant-based.

How to Make it

  1. Blend the can of diced tomatoes until smooth. Set aside.
  2. Sauté the onion in a large pot until soft and golden, about 5–7 minutes.
  3. Add the garlic and ginger and cook 1 minute until fragrant.
  4. Stir in the cumin, coriander, and curry powder and toast for 30 seconds.
  5. Pour in the blended tomatoes and cook 3–5 minutes, until the sauce darkens slightly and thickens.
  6. Add the chickpeas. Stir well.
  7. Add in the coconut milk, Better Than Bullion, salt, and Italian seasonings. Simmer 10 minutes, until the sauce has thickened and the chickpeas are tender and flavorful.
  8. Turn off the heat. Finish with a squeeze of lime and top with fresh cilantro.

Serving Suggestion

Serve over fluffy rice, with warm naan or flatbread, or even over a baked potato. It's also delicious on its own as a hearty stew. Leftovers taste even better the next day.

Storage

Store in the fridge up to 5 days or freeze up to 3 months. The sauce thickens as it sits — loosen with a splash of water when reheating.

Ingredients
  

  • 1 tablespoon Olive oil
  • ½ Purple onion
  • 3 Garlic cloves
  • 1 tablespoon Minced ginger
  • 2 teaspoon Cumin powder
  • 2 tablespoon Curry powder
  • 1 teaspoon Coriander
  • 1 can Diced tomatoes
  • 2 cans Chickpeas (rinsed and drained)
  • ½ can Coconut milk
  • 1 tablespoon Better Than Bullion (vegetable base)
  • 2 teaspoon Salt
  • 1 tablespoon Italian seasoning
  • Cilantro (chopped for topping)
  • squeeze Lime Juice

Instructions
 

  • Heat oil in a large pot over medium heat. Sauté onion 5–7 minutes until soft and golden.
  • Add garlic and ginger; cook 1 minute until fragrant.
  • Add cumin, coriander, and curry powder; stir 30 seconds to toast.
  • Blend the diced tomatoes (with their juices) until smooth.
  • Pour in the blended tomatoes; cook 3–5 minutes until slightly thickened and darkened.
  • Add chickpeas. Stir to combine with the tomato sauce and seasonings; cook for 2 minutes
  • Pour in the coconut milk, the Better Than Bullion, and Italian seasoning. Stir well to combine. Make sure to stir in the Better Than Bullion well to ensure it dissolves and is evenly distributed.
  • Simmer uncovered 10 minutes, until the sauce thickens and coats the chickpeas.
  • Remove from heat. Add a squeeze of lime juice and top with the cilantro before serving

Notes: Blending the tomatoes is the key to a smooth, restaurant style sauce.  It's absolutely delicious this way.  This prevents the thick chunky tomatoes fro taking over your soup.
