No-Cook Two-Bean Lunch Salad (Ready in 10 Minutes)

Some days you need lunch that requires zero cooking, zero recipes to follow closely, and zero cleanup beyond one bowl. This is that lunch.

Two cans of beans, a few chopped veggies, and a handful of pantry spices — that's it. It's protein-packed, fiber-loaded, and honestly better the longer it sits, which makes it perfect for meal prep too.

Why This Works

  • No stove, no oven — perfect for hot days or busy ones
  • Plant protein packed — black-eyed peas and black beans together
  • Meal-prep friendly — make it once, eat it for 3 days
  • Budget-friendly — mostly pantry staples

Ingredients

  • 1 can black-eyed peas, drained and rinsed
  • 1 can black beans, drained and rinsed
  • 1 cucumber, diced
  • ½ red onion, finely diced
  • 2 tomatoes, diced
  • ½ teaspoon cumin powder
  • ½ teaspoon garlic powder1
  • /2 teaspoon onion powder
  • Salt to taste
  • Squeeze of fresh lime
  • Trader Joe's Chile Lime Seasoning, to taste

Instructions

  1. Drain and rinse both cans of beans well.
  2. Add beans to a large bowl with the cucumber, red onion, and tomatoes.
  3. Season with cumin, garlic powder, onion powder, and salt.
  4. Squeeze fresh lime over everything and finish with a generous sprinkle of Trader Joe's Chile Lime Seasoning.
  5. Toss well and taste. Adjust lime and seasoning as needed.

Tip: Let it sit 10–15 minutes before eating if you can. The lime and spices soak into the beans and everything gets better.

How to serve it

  • Straight out of the bowl (no shame in your game. This is my life)
  • Scooped with tortilla chips as a bean salsa
  • Over greens for a bigger salad
  • Wrapped in a tortilla with avocado
  • Spooned over rice or quinoa for a heartier meal

Keeps in the fridge in an airtight container for 3–4 days. The flavor actually deepens by day two.

No Trader Joe's near you? Sub tajin or any chili-lime seasoning, or add a pinch of chili powder plus extra lime zest.
